Need a change from the Pumpkin or Apple Pie desert routine this Thanksgiving? Then give these mini-cheesecakes a try. Not only are they easy to make and taste delicious, but the bite-size serving is a perfect ending following an over-indulgent Thanksgiving meal.
Mini-Cheesecakes (Makes 24)
Ingredients
2 (8 oz.) pkgs. cream cheese
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla essence
24 vanilla wafer cookies
Method
Preheat oven to 325 degrees.
Mix cheese, sugar and vanilla essence until smooth
Mix in the eggs and continue to beat until the mixture looks creamy
Putting it all together
Place foil muffin cups into a mini muffin tray. Arrange one vanilla wafer into each of the cups and pour a tablespoon of batter over each of them
Bake for 12 to 15 minutes or until the cheesecake bounces back after being lightly touched
Let cool completely and top with fruit or chocolate. Place the cheesecakes in the fridge for a few hours before serving.
