Looking for something deliciously spooky for your Halloween party? Look no further. The Eyeball Cake Pops that I will demonstrate today, are guaranteed to be a giant hit with all your guests. So let's get cooking!

Eyeball Cake Pops

Ingredients

1 box Cake mix – white

1 Can of Frosting - white

1 bag of White Chocolate Chips or Candy Melts

48 Chocolate chips

48 Lollipop Sticks

Red Decorating Gel pen

Bake cake according to instructions on the package. Let it cool completely.

Putting It Together

Break the cooled cake into sections and gently crumble it with your fingers into fine crumbs. Add a few large dollops of frosting into the crumbs and mix it in with the help of two forks. Continue to mix additional frosting until the crumbs are sticking together. You may not need the full can.

Roll the mixture into balls about the size of a walnut and place them on the cookie sheet, lined with wax paper

Place the cake balls in freezer for 1 hour to chill. Once they are ready, melt white chocolate chips in the microwave. Dunk the tip of a lollipop stick in the melted chocolate and insert a cake ball onto the tip. Then dip the entire cake ball in the melted chocolate. When the cake ball is completely drenched in white chocolate, stick a chocolate chip smack onto the middle for the 'eyeball'.

Keep the sticks upright using a metal cooling rack to allow the chocolate to dry and solidify. When ready, use a red gel decorating pen to draw a few squiggly lines for the bloodshot appearance.

To display them for a Halloween party, use a half circle of Styrofoam and cover it with cobwebs and plastic spiders. Your family and friends will love them!

Happy Halloween!
