Cooking With Miranda - Zucchini Bread

Zucchini is probably not what comes to mind when you think of a slice of hot delicious bread - Trust me, it's not my favorite vegetable either. However, I guarantee you this bread is delectable - One that will have you licking your fingers!
Zucchini Bread
Ingredients
3 cups All-Purpose Flour
1 cup sugar
2 1/2 teaspoons ground cinnamon
1 1/4 teaspoons salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon ground nutmeg
3 eggs
1 1/2 cups shredded zucchini
1 cup vegetable oil
1 tablespoon vanilla extract
1/2 cup chopped walnuts - optional
Putting It All Together
In a large bowl, combine the first seven (the dry) ingredients.
In another large bowl, beat eggs; add shredded zucchini, oil and vanilla. Pour into dry ingredients and mix just until blended. Fold in the walnuts.
Pour into two greased (you can use butter or cooking spray) and floured (9 inch x 5 inch x 3 inch) bread loaf pans.
Bake at 350 degrees for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
Cut yourself a warm slice (or two) and spread with warm with butter or this even yummier, honey butter (2-3 tbsp softened butter mixed with 1 tbsp honey ). Yum!
